Replacing cracked screen on Ipad2
Can I replace just a cracked screen and not the whole assembly as listed in product (IF 180-000-1) ?

The part number you listed (IF180-000) is for the original iPad front panel assembly, not the one for the iPad 2. That aside, though, you'll want to replace the entire panel assembly because you'll find removing the metal frame, clips, home button and integrated digitizer prohibitively difficult, if not virtually impossible. The last thing any iPad repair needs is more complications.
