Both of these versions can come with or without tools. The main difference is as follows:
iPhone 6s Plus LCD Screen and Digitizer Full Assembly - This is an aftermarket quality replacement screen that includes the small parts (camera, microphone, sensors).
iPhone 6s Plus LCD Screen and Digitizer Full Assembly - Choice - This is an OEM quality level replacement screen that includes the small parts (camera, microphone, sensors).
Either way, iFixit stands behind their parts so if you do have issues, they will replace it. The Choice screen will have better glass, better color (better LCD) and more solid flex cables as well as being assembled with a cold press glue process which is superior to the hot glue process of the aftermarket screen.
IMO, this question should be on the Answers Forum and not Meta as it is of repair interest to anyone who wants to decide which parts to order for their repair. @mayer @oldturkey03

From what I can see, the only difference is that the iPhone 6s Plus LCD Screen and Digitizer Full Assembly includes the option for a fix kit, the other does not.
