My iMac came with an i9 8-core 3.6ghz—I don’t know the exact model. I’m planing an NVME SSD upgrade and thought I might seize the opportunity to upgrade the CPU as well. Is there a faster CPU I can get?

You have the highest performance CPU Apple produced in this series. There really is no higher CPU option possible as you are limited to the 9th Generation/Coffee Lake CPUs as the systems firmware is tuned just for this CPU series.
