Hey,
I have a late 2012 mac mini 2.3 which is currently running the original 1 tb hard drive. I am looking at ssd upgrades to breathe some life back into it. I am wondering if the ssd kits that iFixit sells come with the drive formatted for Apple or Windows. Will I need to format it at all before installation?

Drives are not formatted for MacOS (GUID with either HFS+ or the newer APFS) So you do need to prep the drive using Disk Utility. Besides, if you are replacing or adding a SSD to a system to make it the boot drive you’ll need to install the macOS your system needs.
It makes no difference where you buy the drive, new virgin drives are just not formatted. A used drive might be!
