I think I read somewhere that Apple has built-in tiny sensors on some of the newer Macbooks that allows them to know if a laptop has had a liquid incident. Does anyone know if there is any truth to this? Or is it one of those myths.

This kind of design has been going on for decades. There are indicators, but not electronic.
It works like pregnancy tests, there are chemicals inside the indicator sticker that changes color after absorbing liquid water.

The stickers (called LSI indicators) turn from white to red when exposed to moisture.
My iPhone XS Max will tell me when moisture is detected on the charging cable and ask if I want to go ahead and charge and risk damaging the phone. After the cable is dry the message is gone .
That's because the Lightning connector uses a momentary short when the connector squeezes through the contact pins to start connection detection. If there is water and the pins are always shorted, it knows that there is water in the socket.
