As to your direct Question - The 5s DRAM is 1GB of LPDDR3 as for reference the 5 & 5c use 1GB LPDDR2.
Your flash storage can be either 16GB, 32GB or 64GB on the 5 or 5s the 5c is limited to 16GB or 32GB.

Why? Good tight code shouldn't need that much to run (iOS and/or apps). Other smartphones may have loose code or need to support more devices which makes them bloat.
