I just installed a new battery on my iPod Touch 1st gen. I had everything in and back in place. I plugged in the USB, the Apple popped up, iTunes opened and shut off 2 seconds later. Any idea what could be wrong or what I could fix?

Check the quality of your soldering job. If you did not solder it well or managed to short it, resolder the battery and try again. It can also be a bad battery, so take that into account.
If that still doesn't do it, then you have to restore it in Recovery mode. This will erase everything so try and back the iPod up first.
