I don’t think Apple altered the keyboard, mouse or trackpad units. There really is no real reason to do so. These are slow input devices so offering the super fast newest standard doesn’t make economical sense for them (the older parts are cheaper) and for you, you won’t see any difference as hard as you try!

As you can see the data rates really haven’t changed. The speed of your typing or movement of the mouse or trackpad is still at the lower data rate ~2.0 Mbit/s.
-Joy stick controllers on the other hand, which often have multiple outputs would benefit Bluetooth 5.0 as it allows multiple streams beyond the normal three a headset would need (Left, Right & Mic) of the original Bluetooth spec.
