I used a passive headphone adapter unknowingly, the phone is now stuck in USB OTG mode and thus Fastboot can't be detected on any computer (Windows, Linux, MacOS) not even lsusb shows anything.
Does anyone know what IC is responsible for switching or has a guide on how to fix this?

Never mind, I found out the solution that worked in my case.
Turns out, plugging in passive headphone adapters may cause the USB mux to become "stuck" (Latch-up?) with in my case 100% success.
In case someone else has an issue of dodgy USB-C stuff, they maybe lucky if it's not fried, the can try:
Keep holding the power button until the phone has rebooted at least 5 times, hopefully that'd clear the fault.
Failing that, I did find the following video that contains a partial reverse-engineer of the USB data path where various chips have readable text atop them:

Hopes this helps someone fix a similar issue.
